Make the weekends special: 2 vegetable filled smoothie bowls your kids will love.

Staying home every day during quarantine can sometimes feel like it is groundhog day. Make the weekends special with something beautiful, delicious AND healthy breakfasts that the entire family will love. 

These are our 2 favourite smoothie bowls filled with fruits AND vegetables. You will need a Vitamix to make smoothie bowls just for the power, otherwise you can make these into smoothies by just adding 1 1/2 cups of extra liquid)

Alligator Smoothie Bowl (adapted from Oh She Glows)

  • 1 handful of frozen spinach or two handfuls fresh
  • 1 Lebanese cucumber, or 1/3 of an english cucumber  
  • 1/2 cup of frozen pineapple
  • 1 frozen banana ( I freeze brown bananas especially for smoothie bowls, I find the texture more like ice-cream)
  • 1/3 -1/2 cup unsweetened almond milk 
  • juice from half a lime
  • A few sprigs of fresh mint

Add everything into your vitamix and turn on to smoothie mode. Use the tamper and push everything down as it blends. It will be very loud but so worth it. Add a bit more liquid if it is not blending.

Purple Dragon Smoothie Bowl (adapted from Gwyneth Paltrow)

  • 1 handful of frozen cauliflower (you will not taste it, I promise)
  • 1/2 cup frozen blueberries
  • 1/2 frozen banana
  • 1 Lebanese cucumber or 1/3 english cucumber
  • Juice of 1/2 a lime
  • 1/3 -1/2 cup unsweetened coconut water

Add everything into your vitamix and turn on to smoothie mode. Use the tamper and push everything down as it blends. It will be very loud but so worth it. Add a bit more liquid if it is not blending.
